Pure Pesto

Ingredients:
2 cups fresh basil leaves
4 tbsp lightly toasted pine nuts or sunflower seeds
1-2 garlic cloves
Juice of 1 lemon
Pinch of sea salt
1/4 cup extra virgin olive oil

Directions:
Place all ingredients into a blender and blend for 1minute or until desired consistency is reached.

Optional:
  • If needing a low fodmap version, just omit garlic and use a garlic infused oilve oil.
  • If your able to tolerate dairy, this recipe is amazing with 3 tablespoons of grated parmesan or hard goats cheese.
