Pasta à la Me, Myself & I

Ingredients:
70-100g pasta of choice
1 tsp olive oil
1 chicken breast, sliced into strips
1-2 garlic cloves, minced
1/4 tsp Italian herbs
1 small tub cherry tomatoes (or 1/2 cup passata or 1/2 cup tinned tomatoes)
1Tbsp tomato puree
1/4 -1/3 cup cream (or coconut cream)
Pinch of chilli flakes (optional)
Salt + pepper
Roasted veggies (pumpkin, sweet potato, potato, corn...whatever you like)
Method:
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a pan over medium heat. Add chicken slices and cook until golden and cooked through (roughly 6 minutes depending on thickness). Remove and set aside.
In the same pan, add garlic and sauté for 30 seconds.
Add cherry tomatoes (or passata or tinned tomato's) and puree and cook gently for 2-3 minutes.
Stir in cream or coconut cream until the sauce is silky and pinkish.
Return the chicken to the pan and toss everything together with the pasta. Season with salt, pepper, and chilli flakes if using.
Serve roasted vegetables in a seperate side dish.
Sit down, take a slow breath, and savour this meal.
