Lemon & Herb Chicken with Creamy Tahini for One

Ingredients (serves 1):
1 chicken thigh (skin-on or off, your choice)
Juice of 1/2 lemon
1 tsp olive oil
1 garlic clove, minced
1/2 - 1 tsp dill, chopped
Pinch of salt + pepper
1tbsp tahini
1tsp water (to thin the tahini)
Side Options: Roasted potatoes or rice, roasted pumpkin and carrot and steamed greens
Method:
Mix lemon juice, olive oil, garlic, herbs, salt, and pepper in a small bowl.
Marinate the chicken for 15-30 minutes (or overnight if you like).
Heat a pan over medium heat and cook chicken for 6-8 mins each side, until golden and cooked through.
Whisk tahini with a little water to make a creamy drizzle. Add some chopped dill.
Serve chicken over your choice of sides and drizzle generously with tahini.
