Lemon & Herb Chicken with Creamy Tahini for One

Ingredients (serves 1):
  • 1 chicken thigh (skin-on or off, your choice)
  • Juice of 1/2 lemon
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • 1/2 - 1 tsp dill, chopped
  • Pinch of salt + pepper
  • 1tbsp tahini
  • 1tsp water (to thin the tahini)
  • Side Options: Roasted potatoes or rice, roasted pumpkin and carrot and steamed greens
Method:
  1. Mix lemon juice, olive oil, garlic, herbs, salt, and pepper in a small bowl.
  2. Marinate the chicken for 15-30 minutes (or overnight if you like).
  3. Heat a pan over medium heat and cook chicken for 6-8 mins each side, until golden and cooked through.
  4. Whisk tahini with a little water to make a creamy drizzle. Add some chopped dill.
  5. Serve chicken over your choice of sides and drizzle generously with tahini.
  6. Sit down with a little music, take a slow breath, and enjoy every bite - just for you.
