Apple Pear Breakfast Crumble

(Serves 4)
Filling
  • 2 apples, chopped
  • 2 pears, chopped
  • 1 tsp cinnamon
  • 1/2 tsp cardamon
  • 1/2 tsp ground ginger
  • Pinch of sea salt
  • Squeeze of lemon juice
Crumble Topping
  • 1 cup rolled oats (GF if needed)
  • 1/2 cup almond meal
  • 2 tbsp coconut oil or butter, melted
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • Pinch of sea salt

Directions
  1. Preheat oven to 180°C.
  2. Add the apples and pears to a baking dish with spices, lemon juice, and salt. Toss together well.
  3. In a separate bowl, combine oats, almond meal, cinnamon, and salt. Stir through melted coconut oil and maple syrup until crumbly.
  4. Sprinkle the topping over the fruit.
  5. Bake for 30–35 minutes until golden and bubbling.
  6. Serve warm on its own or with Greek or coconut yoghurt and a drizzle of honey.
