Tahini Choc-Chip Cookies

Gluten free, chewy and protein rich.
Ingredients:
1 cup almond flour
1 tsp baking soda
3/4 cup tahini
1/4 cup almond butter
½ cup of maple syrup, brown rice syrup or honey
pinch of salt
1 egg
1 cup of refined sugar free chocolate chips or a crushed chocolate block
Directions:
Preheat oven to 180° C.
Mix together all ingredients in a bowl and pop in the fridge for 30 minutes (this step is essential for chewy perfection).
Using an ice-cream scoop or spoon, scoop dough out onto a tray lined with baking paper. Gently squash down and bake f0r 11-15 minutes.
