Tahini Choc-Chip Cookies

Gluten free, chewy and protein rich.

Ingredients:
  • 1 cup almond flour
  • 1 tsp baking soda
  • 3/4 cup tahini
  • 1/4 cup almond butter
  • ½ cup of maple syrup, brown rice syrup or honey
  • pinch of salt
  • 1 egg
  • 1 cup of refined sugar free chocolate chips or a crushed chocolate block

Directions:
  1. Preheat oven to 180° C.
  2. Mix together all ingredients in a bowl and pop in the fridge for 30 minutes (this step is essential for chewy perfection).
  3. Using an ice-cream scoop or spoon, scoop dough out onto a tray lined with baking paper. Gently squash down and bake f0r 11-15 minutes.
  4. Enjoy!

Optional: Use hazelnut meal to take these cookies to the next level. Or use a hazelnut chocolate (hazelnut, tahini and chocolate are a magic mix).
