Low Histamine Lemon + Maple Salad Dressing

Keeps: 1-2 days in fridge (use immediately if very sensitive)

Ingredients:
  • 2 tbsp extra virgin olive oil
  • 1 tsp pure maple syrup
  • 1-2 tsp fresh lemon juice (adjust to taste or tolerance)
  • Pinch of sea salt


Directions:
In a small bowl or jar, whisk together the olive oil, maple syrup, lemon juice, and salt until emulsified. Taste and adjust. (Add a splash of water to lighten it if needed). Drizzle over your salad just before serving.


To Note:
Lemon substitute - If lemon isn’t well tolerated, use white distilled vinegar or a touch of ascorbic acid (vitamin C powder) for acidity.
Optional- You can optionally add a pinch of ground ginger, fresh parsley, or crushed coriander seed if you tolerate them.
