Leatherwood Honey, Chia and Oat Cookies

Ingredients:
1 cup rolled oats
1/2 cup almond meal (or oat flour)
2 tbsp chia seeds
1/4 tsp baking soda
1/4 tsp cinnamon (optional)
Pinch of sea salt
1/4 cup coconut oil, melted
1/3 cup leatherwood honey
1 tsp vanilla extract
Optional add-ins:
2 tbsp chopped dark chocolate or raisins

Instructions:
  1. Preheat oven to 170°C and line a tray with baking paper.
  2. In a mixing bowl, combine oats, almond meal, chia seeds, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together melted coconut oil, leatherwood honey, and vanilla. Add wet ingredients (and raisins if using) into the dry. Stir until combined. Let sit for 5-10 minutes so chia can thicken slightly.
  4. Scoop about 1 tablespoon per cookie onto the tray. Flatten slightly with a fork or your hand and add optional chocolate pressed into centre. Bake for 10–12 minutes or until golden around the edges.
  5. Let cool on tray for 5 minutes before transferring to a rack.
