Lamb & Rosemary Meatballs with Couscous and Roasted Root Vegetables, Topped with Tzatziki.

An iron rich meal that combines rosemary-infused lamb meatballs with the earthy sweetness of roasted root vegetables, fluffy couscous, and a refreshing homemade tzatziki.
Serves 4
Ingredients
Meatballs:
500g lean lamb mince
1 small onion, finely grate
2 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped
1 tsp ground cumin
1 tsp sea salt
½ tsp black pepper
1 egg (or flax egg for a plant-based swap)
2 tbsp almond meal (optional, for binding)
For the Roasted Vegetables:
1 small pumpkin, peeled and diced
2 turnips, peeled and diced
2 carrots, peeled and sliced
2 beetroots, peeled and diced or a bunch of baby beets
2 tbsp olive oil
½ tsp sea salt
1 tsp dried thyme
Couscous:
1 cup wholegrain couscous
1¼ cups vegetable or chicken broth
1 tsp olive oil
Pinch of salt
Tzatziki:
½ cup natural Greek yogurt (or coconut yogurt for dairy-free)
½ cucumber, grated and excess water squeezed out
1 clove garlic, minced
1 tsp olive oil
1 tsp lemon juice
Sea salt to taste
Fresh dill and/or mint, finely chopped (optional)
Instructions
Vegetables - Preheat oven to 200°C. Toss pumpkin, turnip, beetroot, and carrots in olive oil, salt, pepper, and thyme. Spread evenly on a baking tray and roast for 30-35 minutes, turning halfway through, until tender and golden.
Meatballs: Combine lamb, onion, garlic, rosemary, cumin, salt, pepper, egg, and almond meal. Mix until just combined, and roll mixture into small meatballs. Heat a drizzle of olive oil in a pan over medium heat. Brown meatballs on all sides, then finish cooking in the oven for 10 minutes alongside the vegetables.
Couscous - Bring the broth to a boil. Stir in couscous, olive oil, and salt. Cover, remove from heat, and let sit for 5-10 minutes. Fluff with a fork.
Tzatziki - Combine yogurt, cucumber, garlic, olive oil, lemon juice, salt, and dill in a small bowl. Adjust seasoning to taste.
Assemble the Dish - Place a serving of couscous on each plate. Arrange roasted vegetables next to couscous. Place meatballs ontop of couscous. Drizzle or dollop with tzatziki.
