Grounding Porridge

Ingredients:
1/2 cup rolled oats
1 cup milk of your choice
1/4 teaspoon ground cinnamon
pinch of ground cardamom
1 tsp chia seeds
1 tsp currants
1-2 teaspoon maple syrup

Optional toppings:
1 tsp coconut oil
1 piece of seasonal fruit (apple, pear, rhubarb, peach etc).
1 tablespoon of nuts and seeds of your choice (walnuts, sunflower seeds etc)
dollop of coconut yogurt

Directions:
  1. Heat coconut oil in pan and add fruit for 1-2 minutes over medium heat. Add nuts, seeds and cinnamon. Cook for another 2 minutes.
  2. Separately, cook oats and remaining porridge ingredients in a small pot over medium heat (roughly 5 minutes, stirring occasionally).
  3. Serve oats in a bowl and add toppings on top. Drizzle with maple syrup and yogurt if using.

    To Note: In summer, reduce or remove the spices and serve with chopped mint and a dollop of coconut yogurt.
